El proceso de infusión en frío produce un concentrado de café que puede guardarse en la jarra hasta dos semanas en refrigeración.
El método de infusión en frío utiliza el tiempo, en vez del calor, para extraer los azúcares, los aceites y la cafeína del café.
De este modo, el café es más suave, bajo en acidez y, lo que es más importante, podrá disfrutar de cada taza si alterar su sistema digestivo. Este concentrado se puede mezclar para conseguir una gran variedad de bebidas frías o calientes.
Añada 14-16 cucharadas grandes de café molido con un tercio del nivel de agua y fije la tapa.
Guárdelo en el refrigerador entre 12 y 24 horas para su preparación. extraiga el infusorio cuando haya terminado. El café en la jarra será un concentrado, que puede servirse caliente o frío.
Para café caliente mezcle 1 parte de café concentrado con dos partes de agua hirviendo. Añada edulcorante o leche a su gusto.
Para café frío o helado, sirva el concentrado de café sobre hielo y agua o leche.
